If you’re ready to take control of your health and lower your environmental impact, cultivating grains de kéfir at home is the perfect place to start. This eco-friendly practice lets you brew delicious and nutritious kefir drinks right in your kitchen while contributing to a greener planet.

Here’s your complete guide to growing and maintaining grains de kéfir, with a special focus on how their cultivation supports Natural Probio’s commitment to environmental respect and natural health.

What Are Grains de Kéfir?

Despite their name, grains de kéfir aren’t grains like wheat or rice. Instead, they’re clusters of good bacteria and yeast bound together in a polysaccharide matrix called kefiran. These live cultures are the driving force behind fermentation, transforming liquids into probiotic-rich beverages. Whether you’re making kefir de fruits (fruit-based water kefir), kefir d’eau (water kefir), or kefir de lait (milk-based kefir), the process begins with these remarkable grains.

Here’s what makes grains de kéfir particularly special:

• Reusable and Self-Sufficient: They multiply during fermentation, meaning you can use them indefinitely with proper care.
• Versatile: Fit for fermenting water, milk, or fruit solutions, they create a variety of drinks to suit your lifestyle and dietary needs.
• Eco-Friendly: Unlike store-bought probiotics, grains de kéfir require no elaborate processing or single-use packaging.

Now that you know the basics, it’s time to learn how to keep your grains happy and thriving!

Cultivating Grains de Kéfir at Home

Growing and maintaining grains de kéfir is easier than it sounds. All you need is the right setup, a little patience, and some eco-conscious practices to ensure you get the most out of your grains.

Supplies You’ll Need:

• Grains de kéfir (either water kefir grains or milk kefir grains, depending on your preference)
• A non-metal container (glass jars are ideal)
• A wooden or plastic spoon
• Filtered or distilled water (chlorine-free is a must)
• Sugar (for water kefir) or milk (for milk kefir)
• A non-metal strainer
• Breathable cloth (for covering the jar) and an elastic band

For Kefir d’Eau or Kefir de Fruits:

1. Prepare the Sugar Solution:

   • Mix 4 cups of non-chlorinated water with 3-4 tablespoons of organic sugar. Stir until dissolved.
   • Optional (for kefir de fruits): Add small slices of fruit like lemon or orange for extra flavor.

2. Add the Grains:

   • Place 2-4 tablespoons of water kefir grains into the sugar solution. Stir gently with a non-metal spoon.

3. Fermentation:

   • Cover the jar with a breathable cloth to allow air circulation while keeping dust out. Secure it with an elastic band.
   • Leave the jar at room temperature (20-25°C is ideal) for 24-48 hours. The grains will ferment the sugars, creating a fizzy, probiotic-rich drink.

4. Strain and Restart:

   • After fermentation, strain out the grains using a non-metal strainer. The liquid is your ready-to-drink kefir.
   • Place the grains in a new sugar solution to begin the cycle again.

For Kefir de Lait:

1. Pick Your Milk:

   • Use fresh milk, either dairy (cow, goat) or plant-based alternatives like almond or coconut milk.

2. Add the Grains:

   • Place 1-2 tablespoons of milk kefir grains into a glass jar filled with milk.

3. Fermentation:

   • Cover with a cloth as described above and leave at room temperature for 24 hours. The grains will ferment the milk, resulting in a creamy, tangy kefir drink.

4. Strain and Restart:

   • Strain the grains out of the liquid and reuse them for your next batch.

Caring for Your Grains

The secret to successfully cultivating grains de kéfir is keeping them healthy and thriving for future batches. Here’s how to do it sustainably:

1. Feed Them Regularly:

   • For water kefir grains, refresh the sugar solution every 24-48 hours. For milk kefir grains, replace the milk every 24 hours.

2. Avoid Chlorine and Metal:

   • Always use filtered water and non-metal tools when handling your grains. Chlorine and metal can damage their delicate microbial structure.

3. Rinse Occasionally:

   • Every 1-2 weeks, rinse your grains gently under filtered water to remove excess buildup. Avoid rinsing milk kefir grains frequently—they thrive better when left in their environment.

4. Store Them Properly:

   • If you’re taking a break from brewing, store water kefir grains in the fridge in sweet water. Milk kefir grains can be stored in fresh milk. Refresh the liquid weekly.

5. Watch for Changes:

   • Healthy grains should be slightly firm and translucent (for water kefir) or creamy and bumpy (for milk kefir). Slimy, discolored, or inactive grains may need a break or extra care.

By following these simple steps, your grains can continue providing you with delicious probiotics for years to come.
